Cheeseburger Salad

Want a luscious cheeseburger without the carbs?  Then this meal is for you.  I found it in Rachael Ray’s “Get Real Meals” and it’s really a great one.  Cheeseburger sliders over a romaine salad with a mustard vinaigrette, what’s not to love?  Matt and I both enjoyed this one a lot.  Very easy and delicious!

2 lbs. ground sirloin
1 small onion, grated
2 tbs Worcestershire sauce
1 tbs grill seasoning
EVOO, for drizzling
12 oz. brick of sharp Cheddar cheese
3 romaine hearts
1 cup sliced dill pickles, drained
1 cup cherry or grape tomatoes, halved
3 tbs yellow mustard
2 tbs apple cider vinegar
1/2 cup EVOO
2 tbs chopped chives
3 tbs drained chopped pimientos, finely chopped

Preheat grill to medium-high heat.
Combine the meat with the onion, Worcestershire sauce, grill seasoning, and a little salt depending on the brand of grill seasoning you’re using. Form 12 large meatballs. Flatten the balls into small patties and drizzle them all with EVOO.
Slice the brick of cheese into small, thin pieces. Grill the burgers for 3 minutes per side. When you flip them, top with cheese, then cover so the cheese melts.
Coarsely chop the romaine and combine with the sliced pickles (I chopped mine) and tomatoes. Whisk together the mustard and vinegar, then stream in the EVOO. Add the chives and pimientos to the dressing and stir to combine. Dress the romaine mixture with the dressing.
Arrange the sliders atop the salad and serve immediately.
