Nacho Chili Cheese Dogs

I came up with this one a few days ago when I was craving chili dogs.  I made sort of a fusion dish between chili dogs and nachos.  It turned out to be incredibly messy, but very very tasty.  Enjoy!

4 hot dogs
4 hot dog buns, toasted
1 pound ground sirloin
1/3 cup Chili sauce
¼ cup ketchup
1 scant tbs Yellow mustard
2 heaping tbs Chili powder
2 tbs Worcestershire sauce
1 tsp hot sauce
Salt & Pepper
1 tbs Ground cumin
2 tsp Ground coriander
Refried beans
Crushed tortilla chips
1 tomato, chopped
Shredded iceberg lettuce
Shredded Cheddar cheese

Preheat a large skillet or saucepan over medium-high heat. Prick the hot dogs with a fork. Place the hot dogs in the pan with a drizzle of canola oil and crisp up the casings. Remove to a plate. Add the sirloin and crumble with a spoon until no longer pink. Add the cumin and coriander and chili powder, along with salt and pepper. Stir to combine. Next, stir in the chili sauce, ketchup, mustard, hot sauce, and Worcestershire sauce. Turn off the heat and set aside.
To assemble and serve: spread the hot dog buns with refried beans. Add a hot dog, then top with the homemade chili. Add some cheese, then top with lettuce, tomato, guacamole, and the tortilla chips. Try not to make too much of a mess! 🙂
