Zucchini and Olive Pizza

This pizza was amazingly delicious! I found it in “Giada at Home” and it was sooo good. We could not stop raving about it. This is a fantastic vegetarian option, too. And the good news is that it was so simple to make – barely even needs a recipe! Here’s how you do it:

Take one package of pizza dough and roll out to desired shape, circle or rectangle. Place it on the pan or stone for baking, and brush with a little bit of olive oil. Take a fork and prick it all over. Thinly slice one large zucchini, unpeeled. I used a mandoline – use the thickest setting. Lay the zucchini slices on the pizza, a little bit of overlap is okay. Drizzle with olive oil, then bake at 425 F for 15 minutes. Take it out of the oven, sprinkle with 1 tbs chopped fresh oregano, shredded mozzarella, preferably fresh, and some grated parmesan or romano cheese. Then sprinkle about 1/4 cup sliced or chopped, pitted kalamata olives. Bake again for another 5 or so minutes, just to melt the cheese. Remove from oven, sprinkle with another tablespoon of oregano, and let rest. Slice and serve! Enjoy!!!
