Hot Dog Salad

Sounds like an oxymoron, doesn’t it? But it is as advertised – a salad with hot dogs in it! This is actually an old favorite, it comes from Rachael Ray’s book “365: No Repeats” and we really, really like it. As written, it will serve 4 portions generously. I only had 4 hot dogs, so I cut the recipe in half when I made it. I’ll write it as 4 servings. It does sound a bit odd, but try it and you’ll see why we like it so much!

1/4 cup yellow mustard
2 tbs red wine vinegar
1 rounded tsp sugar
4 tbs olive oil, or vegetable oil
1 small red onion, thinly sliced
1/2 sack (8 oz) shredded cabbage or cole slaw mix
1 romaine heart, shredded
2 vine-ripe tomatoes, diced
3 large pickles, any kind you would put on a hot dog, chopped
Salt and pepper
8 hot dogs, your choice of pork, beef, turkey, whatever you like, cut on an angle into 1 inch thick slices
In the bottom of a large salad bowl, combine the mustard, vinegar, sugar, and about 3 tbs oil. Add onions, cabbage, romaine, tomatoes, and pickles. Toss the salad, season with salt and pepper, and set aside.
Heat a large nonstick skillet over medium-high heat. Add the remaining tbs of oil to the pan, then arrange the hot dog slices in a single layer. Sear them a couple minutes on each side.
To serve, mound some salad on each person’s plate, then top each with 1/4 of the hot dogs. Serve and enjoy!!
